Hokkaido’s food reputation is unparalleled among Japan’s regions. The combination of exceptional dairy (from the extensive cattle farming) with Japan’s finest seafood (Hokkaido waters are cold and productive) and a distinct local food culture makes eating in Hokkaido one of Japan’s great culinary experiences. Residents visiting Hokkaido should plan seriously around food.
Dairy Products
Hokkaido produces roughly half of Japan’s dairy output. The difference in quality is noticeable:
- Soft-serve ice cream (ソフトクリーム): Hokkaido soft-serve has an unmistakably richer, creamier character than the rest of Japan. Found at farm stands, rest stops, and tourist areas throughout the island. Milk, cheese, and seasonal flavor varieties are excellent.
- Milk and butter: Hokkaido milk is sold as a premium product throughout Japan; drinking it at its source is noticeably superior. Yotsuba, Snow Brand (雪印), and cooperative dairy brands are regional staples.
- Cheese: Hokkaido has developed artisanal cheese production — Tokachi region is particularly notable. Farm tours and cheese factory visits are available in the Obihiro area.
- Cream cheese sweets: Hokkaido cream cheese pastries, puddings, and “Shiroi Koibito” cookies (白い恋人 — the most iconic Hokkaido souvenir) are among Japan’s most gifted omiyage.
Seafood
Hokkaido’s cold, nutrient-rich waters produce Japan’s finest seafood. Key species by season:
- Hairy crab (毛ガニ kegani): The distinctive Hokkaido crab — smaller than king crab but with exceptional sweet flavor. Peak seasons: spring and autumn depending on region.
- Sea urchin (ウニ uni): Hokkaido uni is among Japan’s most prized — Rishiri and Hakodate are particularly famous. Bafun-uni (short-spined) is richer; murasaki-uni (purple sea urchin) is more widely available. Best in summer.
- Salmon (鮭 sake / サーモン): Autumn salmon runs along Hokkaido rivers; salmon and ikura (salmon roe) are central to Hokkaido food identity
- Scallops (帆立 hotate): Hokkaido produces the majority of Japan’s scallops. Fresh, large, and sweet — eat them raw at markets, grilled at izakayas, and as buttered hotate at roadside stalls.
- Snow crab (ズワイガニ zuwai-gani): Peak in winter; elaborate crab course meals available at Hokkaido ryokan
Sapporo Ramen and Regional Ramen Styles
Hokkaido has three distinct regional ramen traditions:
- Sapporo miso ramen: Thick, rich miso broth; corn, butter, and chashu pork; the iconic Hokkaido ramen style
- Hakodate shio ramen: Delicate salt broth — the clearest style in Japan; clear, light chicken or seafood broth
- Asahikawa shoyu ramen: Double soup (chicken + pork) with soy seasoning; rich but cleaner than Sapporo; fat floated on top to retain heat in cold winters
Soup Curry (スープカレー)
A Sapporo-born dish now found across Japan but at its best in its home city. Unlike standard Japanese curry’s thick roux-based sauce, soup curry is a spiced, thin broth — flavored with Southeast Asian-influenced spices, containing whole vegetables roasted separately and then placed in the broth. Chicken leg is the classic protein. Multiple levels of spiciness available. Strongly recommended as a Sapporo dining experience.
Genghis Khan (ジンギスカン)
Lamb and mutton grilled on a raised dome-shaped cast iron grill — the smoke and communal cooking are central to the experience. Sapporo has the highest concentration of dedicated Jingisukan restaurants. The Sapporo Beer Garden (サッポロビール園) combines the experience with all-you-can-drink/eat packages. Daruma (だるま) in Susukino is the most celebrated specialist restaurant — long queues are expected.
Obihiro and Tokachi: Butadon
The Obihiro area in southern Hokkaido is the origin of butadon (豚丼) — thinly sliced pork glazed in a sweet-savory sauce over rice, distinct from similar dishes in mainland Japan. Panda (ぱんちょう) in Obihiro is the originating restaurant (founded 1933). The Tokachi region surrounding Obihiro also produces Japan’s best beans and has a strong wagyu beef tradition.
Omiyage Highlights
Hokkaido omiyage (souvenirs) are among Japan’s most gifted:
- Shiroi Koibito (白い恋人) — white chocolate wafer cookie; the quintessential Hokkaido gift
- Royce’ Nama Chocolate (ロイズ生チョコ) — fresh cream chocolate; refrigerated; exquisite
- LeTAO (ルタオ) cheesecake — double fromage; Otaru-based; refrigerated
- Hokkaido corn products, potato chips (Calbee Jagabee factory in Obihiro), and dairy sweets
